Cherry

Cherries with a sugar content of 23 Brix or higher are selected and then soaked in water for 4 hours. Coffee Mosto is added and carbonic maceration fermentation is performed for 42 hours, followed by secondary anaerobic fermentation with Coffee Mosto for 38 hours, followed by slow drying on African beds for 24 days. Afterwards, the dried cherries are placed in Grain Pro bags and stabilized for 14 days.

Suitable for filter and espresso.
