The Colombia Blueberry coffee undergoes a unique and intricate processing method to develop its rich and complex flavors. Only cherries with 22+ Brix sugar content are selected, then soaked in water for 4 hours to remove impurities. Next, the cherries are fermented in a carbonic maceration process for 20 hours, using mosto (coffee juice) and dried coconut, enhancing its fruity and aromatic profile.
After pulping, the beans retain 50% of their mucilage and are washed before undergoing a secondary anaerobic fermentation with mosto for 21 hours, allowing deeper infusion of its rich flavors. Finally, the coffee is dried for 25 days, further refining its sweetness and complexity.
This meticulous process results in a cup with intense blueberry, coconut, cinnamon, and milk tea notes, offering a smooth, sweet, and aromatic experience. The harmony of coconut and coffee creates a uniquely balanced and flavorful profile, making it an excellent choice for those who enjoy vibrant, fruit-forward specialty coffees. This coffee is best enjoyed through filter brewing, where its delicate yet bold characteristics can shine.
